What do you do with 10 lbs of sweet potatoes?
Two weeks ago The Man found a 10 lb. box of sweet potatoes at Costco marked down to $2.50. I was planning on mashing and freezing, but our freezers are full (we have three; the one above the fridge, a chest freezer and an upright freezer.) So, I turned to the trusty Internet and found this awesome site, backpacker.com. In their forums someone related how they mash and dehydrate sweet potatoes using one of those round dehydrators. There are also several very yummy sounding recipes for using the dehydrated mashed sweet potatoes.
I happen to have two American Harvest round dehydrators, courtesy of Mom the Kitchen Gadget Queen. So, I baked the potatoes until they were almost done then mashed most of them. I added some orange juice per another neat website, The National Center for Home Food Preservation
I sliced a few potatoes and put them on two racks, but loaded the rest of the racks with fruit leather sheets (solid plastic, so purees won't glop up the racks and drip through). Can't wait to see how they turn out!
